My perfect steak starts with bringing the steak to room temperature.  The research I’ve found on the Internet, and through my steak-eating friends, says that this helps the steak cook evenly.  Anyway, it seems to work for me.  After about an hour on the counter, I was ready to cook.  I brought out my trusty, heavy, cast iron skillet and melted about half a stick of butter with some olive oil to bring the smoke point up so the butter didn’t burn.
I seasoned both sides of the steaks liberally with salt and pepper, but especially with the salt.  Once the butter was melted and the skillet was super hot, I added the steaks.  At this point you want to hear sizzling, and lots of it.  That means it’s searing, which means it’s locking in all of those juices.
After a couple of minutes, I flipped them and let them sear on the other side.
Meanwhile, my oven was preheating to 400 degrees.  Once the steak had been seared on all sides and had formed a nice, dark crust, I added a pat of butter to the top of each one and put the whole thing in the oven for about 7-10 minutes, depending on how rare you like your steak or how hot your oven gets.

When they were done, I transferred the steaks to a plate and covered with foil to let them rest.  This redistributes the juices so when you cut into them they don’t go all over the plate.
While the steaks were resting, I finished my sides.  I made roasted broccoli with lemon and Parmesan…
…and of course, mashed potatoes.  I don’t have a potato masher, but my whisk seems to work fine.  Innovation!
This being a Valentine’s dinner, we also had some appetizers: cream cheese with hot pepper jelly and crackers, and fresh mozzarella with pepperoni.
But the real star was the steak.
It had a nice crust on the outside that was well seasoned and, considering the amount of salt I used, not at all salty.  The sear on the stove, finish in the oven method makes for a perfectly cooked steak, which for me is medium rare.
This method of cooking steak is also pretty easy.  With the right tools, a great cut of meat, and plenty of butter, you can make a steakhouse quality steak in about 30 minutes.

The Perfect Steak


  • 2 beef tenderloin (filet mignon) steaks cut about 1 to 1 1/2 inches thick
  • 4 teaspoons kosher salt
  • Black pepper
  • 1/2 a stick of butter, plus two tablespoons
  • 2 tablespoons olive oil


  1. About an hour before your estimated cooking time, take the steaks out of the refrigerator and let them come to room temperature on the counter.  About 15 minutes before cooking, liberally season with salt and pepper, but especially with salt–about 1/2 a teaspoon of salt on each side of each steak.
  2. Preheat oven to 400 degrees.  In a large, heavy, cast iron skillet, melt the butter and olive oil over high heat.  When the butter and oil is melted and shimmering, add the steaks.  You should hear a loud sizzle.  Let sear on each side for about 3-4 minutes, until a dark crust forms on each side.
  3. Top each steak with about a tablespoon of butter and transfer the whole skillet to the oven.  Let cook in the oven for at least 6 minutes.  I probably left mine in there closer to 8 minutes because my oven is weird.  Check for desired temperature by pressing on the middle of the steaks with tongs.  The steak should not feel to soft, and should give about the same amount that the palm part of your thumb does.  Is that confusing?  Here, look at this.
  4. When the steaks are done, transfer them to a plate and cover with foil.  Let them rest for at least 10 minutes, which will let the juices have time to redistribute throughout the steak.
  5. Serve with desired sides and steak sauce, if you must.

Haley Family Macaroni and Cheese

I can’t tell you how many times I’ve had this very basic but very delicious Macaroni and Cheese.  Every holiday, birthday, or random weekend together spent with anyone on my dad’s side of the family has this Macaroni and Cheese in attendance.  If it’s missing, people notice.  Not that it’s ever happened before.
When I wanted to make this, I called my Aunt Joan to get the recipe, only to discover that there isn’t one.  Everyone in the family just kind of eye-balls it and surprisingly, it all turns out mostly the same.  She gave me the approximate ingredients and their amounts and I gave it a shot.  It worked, and I’ve been making it like this every since.  Until now…

(I hope you read that in the movie trailer voice-over voice).

This recipe starts with butter, like most good things do.

When the butter was melted, I added some flour and whisked it together with the butter.  That’s a roux!
The butter and flour became thick and a little dark, then I added some milk and whisked it all together so that there were no clumps.

I seasoned with salt and pepper and a little bit of cayenne for heat and let this cook until it was thick enough to coat the back of a spoon.  When it was thick, I added the cheese and whisked until it was melted.

Meanwhile, I boiled some bowtie pasta until about 2 minutes to being al dente.   I drained the pasta, returned it to the pot, and poured the cheese sauce over the pasta.  I mixed it until the pasta was coated with the sauce  then transferred the pasta to a baking pan.

I topped it more grated cheddar, naturally, covered it in foil, then baked it for about 20 minutes until the cheese was bubbly and the edges of the macaroni and cheese were a little golden brown. That’s the good stuff.
I served this along side some BBQ chicken legs (recipe coming soon!) and corn on the cob and it was amazing.
This is cheesy, comforting, and so delicious.  I liked the flatter bowtie pasta because every piece got a little crunchy, which is my favorite part of a baked pasta dish.

The best part about this?  I wrote down what I did!  I now have a recipe!  Although I think I’ll probably still just eyeball it, because that’s the Haley way!

Here’s the recipe (AJ, feel free to correct anything!):

Haley Family Macaroni and Cheese


  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3 cups milk (I used skim, but if it’s true Haley Family mac and cheese, it’s whole milk all the way)
  • salt and pepper
  • 1/4 teaspoon cayenne pepper
  • 1 block cheddar cheese, grated and divided
  • 1 lb short pasta (elbow, penne, fusilli, bowtie…. whatever!)


  1. Bring a large pot of salted water to a boil and add pasta.  Cook until about 1 minute from al dente.  Drain and return to the pot.
  2. Preheat oven to 400 degrees.
  3. Meanwhile, melt butter in a large skillet.  Add flour to the butter, whisking constantly until fully incorporated.  Add milk, again, whisking constantly until the roux is fully combined with the milk.  Reduce the heat and simmer for about 10 minutes, until it’s thick enough to coat the back of a spoon.  Season with salt, pepper, and cayenne. When it’s thick, add half of the grated cheese and stir until melted and combined.
  4. Add cheese sauce to the pasta and stir to combine.  Transfer to a baking dish and cover with remaining grated cheese.  Cover baking dish with foil and cook for 15-20 minutes until the cheese is bubbly and the edges of the mac and cheese are golden brown.
  5. Serve with BBQ chicken, turkey and dressing, pork chops, ANYTHING!  It’s delicious and delicious comfort foods go with anything.




Eggplant and Gorgonzola Pizza

Let me tell you a story about this restaurant in Italy.  Osteria Dell’Agnolo really isn’t anything special, except that it’s an Italian Osteria in Florence, about a block away from Piazza del Duomo, and if that isn’t special I don’t know what is.  This little gem was part of my school’s meal voucher plan and we went at least twice a week.  We knew the owners and the waiters, and they provided us with way to many liters of free wine. It was our place, and when I think about my time in Florence, I think about the Ponte Vecchio, the outdoor leather markets, and long, relaxing meals at Dell’Agnolo drinking wine and eating Pizza con Melanzane e Gorgonzola.

Feeling a little nostalgic, I decided to try to recreate this pizza at home.  It wasn’t exactly the same, but man, it was close.  This just might be the best pizza ever.

I started with prepared pizza dough spread as thinly as possible on a baking sheet, then I spread some pizza sauce over the dough.  Meanwhile, I sliced an eggplant into half inch rings.

On top of the sauce, I sprinkled just a bit of mozzarella cheese then layered the eggplant over the cheese.

Next, more cheese.  I sprinkled some Gorgonzola crumbles over the eggplant and then covered the whole thing with more mozzarella cheese.

I seasoned the pizza with salt, pepper, and some dried oregano, then put it in a very hot oven for about 13-15 minutes, just until the cheese was brown and bubbly and the crust looked golden brown.

I sliced it all up, served it with some red pepper flakes, and dug in.

Words can’t express how much I love that pizza, but I’ll do my best.  The combination of the eggplant with the sharp, salty Gorgonzola cheese is out of this world.

The melanzane e Gorgonzola pizza at Dell’Agnolo was made on a thin, crispy crust with thinner slices of eggplant, but this rustic version made in my own little kitchen was plenty good.  You know when you taste or smell something that reminds you of a particular time in your life, and it takes you right back to that time?  Well, this pizza did that.

One bite, and I’m sitting in the little Osteria with red and white checkered tablecloths (really), sipping wine, enjoying good conversation, and eating this pizza.  Any food that can do that is pretty perfect in my eyes.

Eggplant and Gorgonzola Pizza

  • Your favorite pizza dough
  • 1/4 cup pizza sauce (whatever is your favorite)
  • 1 cup grated mozzarella cheese
  • 1 eggplant, sliced in 1/2 inch (or smaller) rings (you may not use the whole thing, depending on the size of your pizza)
  • 1/2 cup Gorgonzola crumbles
  • salt
  • pepper
  • 1/4 teaspoon dried oregano
  • Red pepper flakes for garnish (optional)

  3. Season with salt, pepper, and dried oregano.
  4. Bake in oven for 13-15 minutes, until cheese is brown and bubbly and the crust is golden brown.
  5. Serve with red pepper flakes if desired.

Fettuccine with Prosciutto and Orange

I recently mentioned that I bought (and fell in love with) the May issue of Bon Appetit.  It is chock full of fabulous Italian recipes, from simple yet delicious pastas to sinful desserts.  While flipping through, I earmarked almost every other page for recipes that I wanted to try.

This is one of those recipes.

I couldn’t really get this recipe out of my head.  It sounded strange and exciting and I knew I had to have it.  I will tell you this: orange cream sauce changed my life.

I started by boiling some heavily salted water and tearing about 8 slices of prosciutto into about 1 inch pieces.

I think prosciutto is so pretty.

I also zested an orange.

I think that’s pretty too.

When the water was boiling, I melted 2 tablespoons of butter in a large skillet.

Then I added the prosciutto and cooked until slightly browned.

Meanwhile, I added linguine to the salted boiling water and cooked until about 2 minutes from al dente.  I reserved 1/4 cup of pasta water and added it to the prosciutto.  Then I added some light cream, orange juice, and orange zest and boiled until slightly thick

I seasoned with black pepper at this point, but left the salt until the end because the prosciutto is pretty salty.

I added the drained, undercooked pasta to the skillet, and with tongs I tossed for about 2 minutes until the pasta had finished cooking, absorbed most of the liquid, and was completely coated with the sauce.

Once the pasta had done it’s work in the skillet, I removed it from the heat and added 1/2 cup grated Parmesan cheese and 1 tablespoon of butter and tossed to combine.  I served in a bowl with a little more grated Parmesan on top and some chopped fresh thyme.

Oh man was this good.  It was satisfying and rich but not too heavy.  The orange really brightens the sauce and I wondered why on earth I hadn’t thought of this before.

This opened my eyes to a whole new world of future pasta creations with different citrus.  Lemon Pasta is one of my favorite dishes so it makes sense I would love other citrus variations.
And prosciutto is quickly becoming one of my favorite ingredients.

Here’s the recipe!

Fettuccine with Prosciutto and Orange (adapted from Bon Appetit)

Kosher Salt for pasta water

12 ounce package of Fettuccine

3 Tablespoons butter, divided

about 8 slices of thinly sliced prosciutto, torn into 1 inch pieces

Zest and juice of 1 orange

1/2 cup light cream (you could use heavy cream too, but I didn’t miss it)

Freshly ground black pepper

1/2 cup grated Parmesan cheese

1 teaspoon fresh chopped thyme

Bring a large pot of water to boil and salt well.   Add fettuccine and cook until about 2 minutes until al dente.  Reserve 1/4 cup of the pasta water and then drain.

Meanwhile, melt 2 tablespoons of butter in a large skillet.  Add the torn prosciutto and cook until slightly browned, about 4 minutes.  Add reserved pasta water, cream, orange juice, orange zest and black pepper.  Bring to a boil and add undercooked pasta.  Toss with tongs for about 3 minutes, until the pasta is cooked and coated completely with the sauce.

Remove from heat and add 1/2 cup Parmesan cheese and 1 tablespoon of butter and toss together.  Taste for seasonings and add more salt or pepper if needed

Serve in a bowl with chopped fresh thyme on top.
